The enterprise edition has special features when it comes to the version of a product.
The publication allows the user to publish a product but to continue working on another version. This is really convenient if a product is meant to change; you can publish a first version but start working on the next one while the first version is out.
Along the same lines, the “restore” version permits to come back to a previous version without losing the history of the product modifications.
