I launched a csv_pim_products export but nothing is listed in the export history?

If there is nothing listed in the export history, this means that an exception occurred during the process launch. Once launched, all exception are raised in the export log, you will be able to download it from the export history tab.

If you don’t have the history tab, you can take a look on the server, in the log app/log/batch_execute.log the exception will be tracked down.
